The following recipe is filling, nutritious
and so scrummy. Serves 2
2-3 very ripe bananas
500ml coconut milk
1 level tblspn raw chocolate powder
Pinch cinnamon
Vanilla extract or ½ vanilla bean pod
Blend all ingredients in a blender until
smooth. If you want a colder milkshake, peel then chop up the bananas and leave
in the freezer overnight. Add frozen banana to milk a few minutes prior to
blending or alternatively add ice.
You can vary the recipe by adding nuts,
seeds, dried fruit that have been soaked over night and some fresh coconut
meat. Always discard the soak water from the nuts.
*Nut milk is easy to make. Blend 1½ cups of
almonds in 600ml pure water, then strain though muslin or cheesecloth. For a
sweet milk, mix with ¼ tablespoon of raw honey or for vegans blend in a couple
of medjool dates. The almond meal can be used in veggie burgers or nut loaves.
For best results soak almonds over night. Left over milk will keep for two
days. Drink neat or use in other recipes.
